My rhubarb is almost ready to pick so here is another delicious, quick and easy way to use it! - one yellow or white cake mix prepare as directed & pour into greased & floured 9 x13 baking pan - 3 - 4 cups cleaned & washed rhubarb cut into 1/2' pieces - sprinkle on top of cake batter - 1 cup white sugar - sprinkle over rhubarb - 2 cups (1 pint) whipping cream pour over all - Bake at 350 degrees 40 - 45 minutes or until golden brown & cake leaves sides of the pan. To make - it even more delicious, serve with a dollop of whipped cream.

I found myself tearing up in my doctor’s office recently and not over my diagnosis or pain or my life as a disabled person. I was speechless and crying because of the choices of others and the impact those choices have on my life. The words, “We don’t have to.” kept ringing through my voiceless mind. This simple sentence has been the reaction to most of my world since age 7. From having access to accessible bathrooms in elementary through high school to physical accommodations in college to finding lodging that meets my needs for vacations as an adult, and now to access meetings in a hybrid world, these are words that should not be used.

Bizz Buzz: New engineering firm joins Two Harbors business community

“Neighbors serving neighbors” is a Bollig Engineering motto, and something that Nathan Feist takes to heart as a new neighbor in Lake County. Bollig Engineering, a provider of municipal and aviation engineering services in Minnesota has opened a new office in Two Harbor to provide a strategic location to better serve its clients in the region and expand its reach to more cities in Minnesota.

Knife River History & Cultural Center

Reprinted with permission from the KRHCC February 2023 newsletter Welcome to Mookomaani-ziibi, MN 55609 I am quite embarrassed to say that after living in Knife River (KR) for more than fifty years I had no idea of KR’s early Indigenous history other that the name Knife River evolved from the Ojibwe word “Mookomaaniziibi” meaning “river with sharp stones”. I also did not know that as late as 1800 there was a summer Ojibwe village on Granite Point (forms the west entry to the marina), which is just a block from where Mary and I live! The Indigenous history of Knife River might have been lost had it not been for Todd Lindahl, KRHCC ace historian and archeologist, who recorded this very important part of KR history and now shares it with readers of the KRHCC newsletter.

A Look at the Past

April 1923 plans were being laid for the construction of a hotel on the corner of First Avenue and Poplar Street. With an estimated cost of $65,000 it was largely supported by the Lake County Development Association in an effort to capitalize on the growing tourism trade in the area.
