I recently brought this cake to church for coffee fellowship & there were requests to print it in this column so here it is! Ingredients: - 1 ½ cups boiling water - 1 cup quick oatmeal - 1 stick (1/2 cup) butter or margarine, softened - 1 cup white sugar - 1 cup brown sugar Instructions: In medium sized bowl pour boiling water over quick oatmeal. Let stand 15-20 minutes.

Bell Ringers

After a rather long day of errands I arrived at Super One grocery store in Two Harbors for a last-minute purchase. Upon entering the store, I was pleasantly “transported into the Christmas Spirit” by a very young group of children singing Christmas carols, jingling bells and ringing the Salvation Army bell with jubilant enthusiasm.

Balsam clean-up, Highway Corridor Project, and Levy Discussion in Lake County

At the Lake County Board meeting on Tuesday, Nate Eide, forestry department head, brought to the Board’s attention the work his department is doing to dispose of balsam and spruce trees that have been decimated by the spruce budworm. This destructive native species has had an extended peak, but it may be passing. They did a balsam cleanup in conjunction with The Nature Conservancy on Knife River, dragging hundreds of balsam into piles to burn. This greatly reduces the fire risk in the area. They will be planting budworm-resistant seedlings, mostly pine, which will need to be caged and capped for up to a decade because of the deer.

Saffron Buns

Yield: 24 buns Ingredients - 2 packages active dry yeast - 1/2 cup warm water, 110F to 115F - 1/2 cup sugar - 1/2 cup unsalted butter, melted - 1/2 cup heavy cream - 1/2 cup whole milk - 1/4 teaspoon crushed saffron threads Instructions - In the bowl of a stand mixer, combine the yeast in the warm water; stir gently and briefly with a fork. Add 1 tablespoon of the sugar; stir again.
